Friday 27 January 2017 – Cooking Class: The Magical Art of Spice Mixing, 6.30 – 9.30pm, Cardiff, Central location to be confirmed a week before the event

Join us to learn and practice the making of some of Lia’s favourite spice mixtures from scratch. You will measure, roast and grind spices into mixtures such as for example a fantastic Greek oregano and spices condiment, Morrocan Ras El Hanout, Syrian Bhaharat, Egyptian Dukkah. At the class we will also introduce you to allspice or pimento berries and also discuss and taste some basic spice combinations for ingredients regularly found in our modern kitchens such as paprika, pepper, oregano and even turmeric.

Our menu will be a surprise as we don’t know what donations will come to us but classics such us bread Skordaliá (garlicky bread dip) and our diverse Greek/World cuisine repertoire will influence our offerings.

Lia’s Kitchen is a member of Slow Food South East Wales and we are joining their Autumn event to bring you delivious Greek pies made with Wales grown greens. A cooking demonstration and interactive games teaching families and little people about portioning, world flavours, and healthy eating.

2 July 2016 – Cooking demonstration at Tafwyl Festival at Cardiff Castle, Free for those attending the festival.

Join Lia Moutselou from Lia’s Kitchen at 11.30 am at Tafwyl Fair, Cardiff Castle (http://www.tafwyl.org/en/) for a brief demonstration of savvy recipes which could help you love your leftovers in a most delicious way.

Vegetable filled savoury muffins and a delicious bread dip, traditional in Lia’s homeland, Greece, will inspire you to think twice before you throw away that little bit of leftover carrot or bread.

Lia’s Kitchen is a food venture which organises pop-up dinners, cooking workshops, food events and educational projects, it provides recipes and menu development. Lia is a self taught chef who is inspired by Greek cuisine, Welsh produce and ingredients from around the world to bring you a feast of flavours and creative recipes.

Our demo will be translated to Welsh by chef Nerys Howells.

Join us for a Syrian cooking workshop which will give you insights and an introduction to Syrian cooking. Together we will prepare two of the most typical Syrian/middle eastern spice mixes Zaatar and Baharat, the popular middle eastern dips hummus and mutabal, mujadera rice and lemonade amongst other things.

The workshop fee includes lunch, hot drinks and refreshments as well as the workshop experience and recipes to take away with you.

We are taking our good Love Food Hate Waste work to four Cardiff schools to engage parents and their children in food waste reduction related activities. Our lunch club is not just about preparing and sharing delicious, nutritious lunch together but also taking part in various games and food waste reduction education activities.

Lia’s Kitchen is collaborating with Oasis Cardiff to deliver a unique Syrian cuisine dinner at the charity’s venue. The menu of the pop-up dinner is inspired and based on recipes of some members of the Syrian community who shared their knowledge, culture and recipes with us. Mody’s hummus, with Zakaria’s Kibbeh and the group’s delicious Zaatar bread will be some of the delicacies featuring on the menu.

At this private cooking workshop we are focussing on the secrets of making the amazing keftedaki, and meatball dish which is an all-time favourite all over Greece. Friday 22 January 2016, 1.30-5.30pm – Oasis Charity Syrian cooking gathering (R&D) – this event is by invitation only but we welcome additional Syrian participants who can share their recipes. Contact liaskitchen@gmail.com, 07870131558.

On Friday 22 January Lia’s Kitchen is facilitating a cooking gathering which will involve Oasis charity users and any other available members of the Syrian community who would be willing to share recipes, ideas and the treasures of their culture.

We will cook and record Syrian recipes provided by our participants. Some of these recipes could be included in the menu for a ticketed dinner at Oasis Refugee Charity at the end of March 2016. Our food gathering will also research popular teas and drinks that we can serve at the pop-up dinner in March.

What we can cook might be limited by the ingredients provided. But we look forward to learning from the Syrian community of Oasis and Cardiff how they think we should be cooking dishes such as for example Kibbeh, Fattoush, Muttabal Shawandar, Harisi, Mujjadera rice, Laban Bikhayar, Foul medames, or filo pastry deserts flavoured with Orange blossom syrup. We are open to other ideas and could hold a follow up gathering.

Saturday 6 June 2015, Slow food Wales event, St Fagans Museum, Cardiff 

Lia’s Kitchen participated in the launch of Slow Flood South East Wales. Our Pieshop offered fresh Greek pies made with local ingredients grown by Riverside Market Garden and Blaencamel farm. A unique collaboration between Riverside Market Garden and Lia’s Kitchen for a market pie-shop pop up. On our sell out menu were Greek Pies with wild greens including chard, nettles and dandelions forages from the farm and made with extra virgin olive oil, filo pastry and real feta cheese and a lemon polenta cake with rosemary syrup. Riverside market garden plants were on sale on the day, so many left with seedlings of the mints and other herbs that were used in the pie.
